While I am an omnivore, I have found that I am eating more and more meat-free meals these days because they are just so delicious! This delectably tasting wonder is a vegan low carb butternut squash soup, which has all of the traits of an amazing keto-friendly meal, plus the added bonus of being nut-free AND vegan, which is a hard combination to come by. Before I get into the nitty gritty, I want to point out the obvious that the majority of the ketogenic diet is made up of fresh foods that you can find at any supermarket or grocery store: vegetables, meat & fish, seeds, select fruits. Dairy products like cream and butter are also readily available–the trick is to find the ideal ones with less chemicals or additives. As for the other more special or unique products that allow you to hack your way through a keto dessert recipe or experiment with flavors and textures, I’ve got you covered. Following the ketogenic lifestyle means giving up a lot of store-bought mayonnaise options, salad dressings and sauces because of how much sugar they contain. That certainly doesn’t mean we can’t have any. This amazing avocado mayo is so versatile, I use it on almost anything! Winter means cold, and cold weather means soup season! Some people think it’s weird, but I could eat soup every day. Of course it would have to be a different flavour each time, and varying textures, but I would love it! I used to love cream of mushroom soup as a kid, but can’t eat the canned version nowadays. This gluten-free Vanilla Almond Mousse is a great keto-friendly dessert or breakfast filled with good fiber, a large amount a healthy fats for such a small serving, and it fills you right up! Go ahead and enjoy it for breakfast too. Goes great with pumpkin seeds as garnish for added fatty & fibrous protein and some crunch to the smooth mousse. For an evening treat, I top it off with a few raspberries. Did I mention it took me under 10 minutes to make it!? And it only took that long because I stopped to take pictures!

Those of you who know me personally are likely aware of my struggles for the last few years with fluctuating weight. Going from starvingly sick student, to depressingly-eating-everything-fat, and going from one to the other without much of a transition.
